Title: Oriental Cabbage Slaw

Yield: 8 Servings

1mdCucumber; halved lengthwise
  ; and thinly,
  ; sliced
1cFresh pea pods;, halved
1/4cRice vinegar
1tbSalad oil
2tsToasted sesame oil
1/2tsSugar
1/8tsSalt
1/2tsRed chili paste; (optional)
4cShredded napa cabbage
1/2cCoarsely chopped honey-roasted peanuts

In a large mixing bowl combine cucumber and pea pods. For dressing, in a small mixing bowl stir together vinegar, salad oil, sesame oil, sugar, salt and red chili paste, if desired. Pour over cucumber and pea pods, stirring to coat. Cover and chill for 4 to 24 hours. Just before serving, stir in cabbage and peanuts. Makes 8 side-dish servings.
